Is it possible to create two pipelines in the same company, that does not share the same fields for deals? Besides that, is there a way to only trigger webhooks for a specific pipeline?

Unfortunately it’s a ‘no’ for both of those (but different fields per Pipeline is something we may add in the future.
As for the webhook, while you can’t specify a specific Pipeline, you can filter out the results on your end, kind of like what is stated here: Webhooks fired when certain fields are updated
