Exporting from the API to Excel

Hello, newbie here.

I have managed to navigate the API here Pipedrive API v1 Reference pretty well. It has been a real eye opener.

I am trying to populate external reporting software with the dates which we changed stages on our PD. Can anyone give advice on the best way on identifying those dates and how we would export the dates on to excel?
