I need the /v1/deals/timeline API parameters, in particular the value of the field_key.

Welcome to the community 
As you rightly pointed out,
the field_key pertains to any date field key such as add_time, update_time, close_time, won_time, etc. Basically the name (technically - key) of the deal field that is of type DateTime.
