I have been trying to retrieve deals based on a simple condition status = “open” using postman and the filter example I found.

What exactly are you getting as a response and what are the other elements to what you are filtering in the request?
For example, if you only wanted to get back Open deals, you could use:
https://api.pipedrive.com/v1/deals?status=open&start=0&api_token=
